Carrot Pudding

In most instances, when people talk of pudding recipes, they think that they can throw together a quick fix of fruits and they are ready to go. My favorite pudding recipe however is carrot pudding which was passed down to me by my mother. While growing up, she was constantly talking about the importance of maintaining good health through fresh vegetables and one of the major reasons why I love this recipe is the fact that it combines good health and adds a delicious sumptuous aspect to it. Not to mention I have amazing memories of taking over her kitchen, and her mopping up my messes with paper towels, In addition to this, it is easy to prepare.
Ingredients
l ½ a cup of brown sugar
l ½ a cup of grated carrots
l ½ a cup of raw potatoes
l ¼ a cup of vegetable shortening
l ½ a cup of raisins
l ¼ cup of breadcrumbs
l ¼ cup of milk
l 11/4 cup flour
l half a teaspoon of salt
l half a teaspoon of mixed spices
l half a cup of currants
l half a cup of sherry wine
l half a lemon
Procedure
- Mix all the ingredients together except the lemon, sherry wine and spices
- Cover the ingredients and let them steam for three and a half hours
- Wash the prunes and let them soak into soak at least for one night
- The next morning, reduce the water until they are slightly submerged in it then simmer it for a while. You should always ensure that you do not let them boil as this will only make them go bad
- Once you are done with this, mix all the ingredients together again and add the lemon juice, the cinnamon
- The final step is adding the sherry wine into the mixture, stir it properly and serve it.
