Roasting Vegetables.
When you are Vegetarian there are all kinds of really tasty foods to choose from. However, a lot of veggies tend to get into the habit of eating pre-packed foods that are designed to be an alternative to meat. There is nothing wrong with these products, but we should not forget just how many really tasty vegetables there are and that they are full of vitamins and goodness. Vegetarian food does not have to look like a beef burger or a sausage to be tasty.
Here is a wonderful way of making use of several different vegetables. If there are any here which you do not like then please feel free to pick and choose. It is also quite possible that you can think of a good few others that I have missed out!
ยท Some possible vegetables (that I have used in the past) include; parsnips, potatoes, leeks, onions, carrots, cherry tomatoes and courgettes.
All you need to do is to cut them all up fairly small and put them on a greased baking tray. If you like garlic then placing a few chunks amongst the vegetables will give them even more flavour. Don’t worry about using too much garlic as it will actually end up tasting quite sweet. Give them a brush with olive oil (or a few squirts of a low fat spray if you are on a diet) and put them in a preheated oven; it needs to be on 200c (or Gas Mark 6). They should be cooked in around 30-45 minutes (depending on your oven).
Nice and easy, huh? And think about the goodness in all of those different veg!
This is the sort of thing that will go really well with many types of food but, personally, I like it with omelette! Yum yum!
I think I have a solution for what we should do for Elayne’s engagement party. Who would be up for a bombshell trip and putting up a bit of income on some chalets.
